Lisa and I arrived about 10am – and made quick work of setting up our machines and getting our projects out, all while being supervised by Miss Shelby Jean ---Quilt Inspector Extraordinaire!

She knows there’s been a Sadie around here – her nose has not stopped sniffing trying to find where she is!  Such a cute bundle of fluff.

Within short order we were sewing and chatting away, catching up on the goings on over the past few months.

The plan when we first got Quilt Villa was to come up here and sew as often as we could.  Great in theory, right?

In reality – it’s been since JULY since we have been able to make it work with our schedules and we are cramming it in before the holidays take us each our separate crazy directions.

I’m back to working on my Boxy Star block quarters – I’ve got more than 50 now…but a long way to go, I need 120 quarters, enough for 30 blocks.

We took some time out for lunch ---and I have to share this recipe with you!

Cheesy Potato Pancakes!

INGREDIENTS:
3 cups chilled leftover mashed potatoes
2/3 cup shredded cheddar cheese
2 Tablespoons chopped scallions, green and white parts
1 egg, lightly beaten
3 Tablespoons plus 1/2 cup all-purpose flour (I used gluten free flour)
Vegetable oil, for pan-frying
Sour cream, for serving

DIRECTIONS:
In a large bowl, stir together the mashed potatoes, cheese, scallions, egg and 3 tablespoons flour until combined. (See Kelly's Notes.) Using your hands, divide the mixture into 12 portions. Roll each portion into a compact ball then flatten it into a pancake about a 1/2-inch-thick.

Place the remaining 1/2 cup of flour in a shallow dish and carefully dredge each pancake in the flour.

Heat 3 to 4 tablespoons of vegetable oil in a large sauté pan over medium heat. (Add enough oil to thoroughly coat the bottom of the pan.)

Fry the pancakes, in batches, until they're golden brown and crispy on both sides, 3 to 4 minutes. Add more oil to the pan as needed between batches. (Do not overcrowd the pan and do not flip the pancakes too soon or they won't develop a crisp crust.) Transfer the pancakes to a paper towel-lined plate and immediately sprinkle them with salt.

Serve the potato pancakes topped with sour cream and garnished with additional chopped scallions.

I forgot to take pictures of them topped with sour cream and chopped green onion ---we were too busy eating them for our lunch!

It’s great to have  girl friend time up at the cabin ----we’ll spend tonight doing what we’ve been doing all day…
